Vegetable and spice-style Meatballs

Hi guys, its Zoe here and I have a tasty recipe bya UKTS Patron, Tonia Buxton for you this week!
This is a great recipe for the whole family;especially for children as it is an easy way to sneak in vegetables into therecipe to help reach their 5 a day! Red meat is generally high in iron such as beef mince, steak, and pork etc. You can make simple swaps to ensure your meals are lower in iron without eliminating recipes that you enjoy! For example, you can swap beef mince for turkey mince that is both lower in iron and a leanertype of meat. Small changes can make a positive difference!

Ingredients
  

  • 1 large onion
  • 4 cloves garlic Blitzed
  • 2 small sweet potatoes Blitzed
  • 1 bunch parsley grated
  • 2 carrots Blitzed
  • 500 g minced turkey
  • 1 tsp grouned cinnamon heaped
  • 1 tsp salt
  • 1 tsp fresh ground black pepper
  • 1 tbsp sumac
  • 1 tsp ground turmeric
  • 1-2 red or green chillies, blitzed optional
  • 2 medium eggs

Notes

Method:
  1. Preheat the oven to 180°C/350°F/Gas Mark 4.
  2. Line a baking tray with baking paper.
  3. Place all the ingredients, except the eggs, in a large bowl and then add the eggs.
  4. Using your hands, mix everything together for 3–5 minutes.
  5. Form the mixture into large meatballs, or burgers.
  6. Arrange the meatballs on the prepared baking tray and bake in the oven for 30–35 minutes. Check that they are cooked through before serving.
