Pallea

This week I have a simple paella dish for you thatis perfect for the whole family! This recipe is high in vitamin C due to having lots of vegetables. The sauce is made from tomatoes and is also low in iron. Itis important to note that vitamin C sources increase non-haem iron absorption;non-haem iron is found in plant sources such as spinach. Therefore,thalassaemia patients should try to avoid pairing high iron foods with foods that are high in vitamin C. This recipe is an example of this as the prawns are low in iron and the vegetables are a source of vitamin C. As always, I hope you enjoy this recipe, and any feedback or suggestions are welcomed.

Ingredients
  

  • 1 tin chopped tomatoes
  • 200 g passata to thicken optional
  • 225 g Prawns
  • Pepper/courgette/mushrooms
  • 300 g Basmati rice
  • 1 vegetable stock cube
  • olive oil
  • salt and pepper to taste
  • handful of parsley to garnish

Notes

Method:
  1. Cook the rice with boiled water and add the vegetable stock cube
  2. While the rice is cooking prepare your vegetables and cut them into small pieces
  3. Add olive oil to a pan and fry your vegetables. Once they being to cook, add the chopped tomatoes and simmer until the liquid has evaporated
  4. Once the sauce and the rice are ready, cook the prawns in a separate pan with some olive oil for no more than 5 minutes
  5. Now every component is ready, combine the vegetables, prawns, and rice to a bigger and season
  6. Garnish with parsley
